Talos de Maíz con Albóndiguillas de Tofu, Fritada de Tomates y Pimientos del Piquillo (Veganos y Celíacos)
Ingredientes
(Para 6 Talos)
250 grs. de harina de maíz ecológica molida a la piedra
1 cucharadita de sal
agua filtrada
salsa de tomate casera
1 pequeño bote de tiras de pimientos del piquillo
Elaboración
En un bol amplio ponemos la harina de maíz y la sal y vamos añadiendo poco a poco, a ojo, agua lo más caliente que nuestras manos puedan aguantar, hasta que tengamos una bola no muy reseca. La envolvemos en film de cocina y la dejamos reposar al menos media hora.
Mientras elaboramos las albóndigas siguiendo la receta.
Cocinamos la salsa de tomate casera de la siguiente manera, media cebolla rehogada en 4 cucharadas de aceite de oliva virgen, añadimos un bote de 500 gramos de tomate natural triturado, dejamos cocer, tapado porque salpica, durante un cuarto de hora, al final salpimentamos y trituramos. Al final añadimos las tiras de pimiento del piquillo y damos un hervor más.
Para hacer los talos, dividimos la masa en 6 porciones similares de tamaño, las pasamos por algo más de harina de maíz y las aplastamos entre dos trozos de film de cocina, hasta que estén bastante finos. Se necesita algo de habilidad porque la masa de maíz se resquebraja fácilmente, pero sobre la marcha puede conseguirse. Se cocinan a la plancha por ambas caras.
Para servir ponemos el talo en un plato y sobre la mitad de su superficie colocamos dos o tres albóndigas y cubrimos con fritada de tomate y tiras de pimiento. Se dobla el talo y puede comerse como un bocadillo.
Consideraciones
Se trata de un tipo de pan tradicional de la cocina vasca. Por ser 100% de maíz es apto para celíacos.
Cada talo tiene unas 125 calorías. Luego todo dependerá del relleno que le pongamos, pero pueden estar muy buenos con unas simple setas, cualquier verdura salteada, ensalada, algún queso o paté vegetal, y también en dulce, por ejemplo con chocolate negro que se funde sobre el propio talo en la plancha antes de sacarlo.
