Salteado de Col Rizada con Salsa Cruda de Tahini
Ingredientes
1 col verde rizada
4 cucharadas de aceite de coco
2 dientes de ajo
2 cucharadas de tahini de sésamo crudo
1/2 zumo de limón
4 cucharadas o más de agua filtrada
pimienta negra
ajo en polvo
Elaboración
Picamos la col a cuchillo laminándola muy fina. Pelamos y laminamos los ajos. Salteamos primero los ajos y después añadimos la col, ligeramente con el aceite de coco, hasta que esté semicruda, al dente. Salamos al gusto y reservamos.
Para la salsa mezclamos el tahini con el limón y el agua, hasta que la consistencia sea fluida pero cremosa. añadimos ajo en polvo, sal y pimienta a nuestro gusto.
Servimos la col y por encima la salsa. Nosotros lo hemos acompañado de tortas de patata hechas en aceite de coco.
Si se prefieren toques más exóticos, aprovechando el sabor del coco, puede perfumarse esta receta con curry, con gengibre o con garam-masala.
