Redondos de Mijo con Salteado de Berenjenas, Coulis de Tomate y Sésamo Negro
Ingredientes
Para los Redondos de Mijo
1 taza de mijo
2 tazas de agua filtrada sin cloro
sal
ajo en polvo
perejil, pimienta negra
Para el Coulis de Tomate
1 taza de tomate crudo triturado
1 cebolla pequeña
2 cucharadas de aceite de oliva virgen
sal
sésamo negro para espolvorear
Para el Salteado de Berenjenas
500 gramos de berenjenas
2 puerros
2 cucharadas de aceite de oliva virgen
sal
pimienta
orégano
Elaboración
Para los redondos ponemos a cocer el mijo con el agua y algo de sal tapado durante 20 minutos. Al final habrá consumido todo el agua. Dejamos enfriar por completo. Añadimos ajo molido, pimienta, perejil u otras especias si gustamos y procedemos a formar los redondos que se hacen rellenando un aro de presentación con el mijo cocido entasándolo con el revés de una cuchara. Antes de servirlos los pasaremos a la plancha con unas gotas de aceite.
El coulis de tomate se elabora rehogando un poco la cebolla en el aceite, añadiendo el tomate y cociendo 15 minutos. Después lo trituramos todo. Salamos ligeramente.
El salteado lo hacemos con los puerros cortados en rodajas finas y las berenjenas en rodajas y en cuartos. Con el aceite en sartén tapada para que salga el jugo y no se evapore antes de que las hortalizas estén tiernas. Tardaremos unos 10 minutos. Salamos y espolvoreamos con orégano.
Servimos todo junto espolvoreado con sésamo negro.
