Piquillos de Champiñones y Avena con Muselina de Zanahorias al Miso Blanco
Ingredientes
1 bote de Pimientos del Piquillo ecológicos
1 bandeja de champiñones
4 cucharadas de copos de avena
1 cebolla pequeña
4 zanahorias medianas
4 dientes de ajo
2 cucharadas grandes de miso blanco
250 cc. de agua filtrada
8 cucharadas de aceite de oliva virgen
1 chorrito de vino blanco
sal
pimienta negra
nuez moscada
Elaboración
Cubrimos los copos de avena con agua. Limpiamos y cortamos a láminas los champiñones. Los ponemos a pochar con 4 cucharadas de aceite, cuando hayan perdido el agua, añadimos los ajos triturados, el perejil, los copos de avena escurridos y salpimentamos, damos unas vueltas, apartamos y reservamos.
Rellenamos los pimientos del piquillo y los colocamos en una cazuela.
En un cazo preparamos la muselina de zanahoria estofando la cebolla fileteada con el resto del aceite. Cuando esté blanda añadimos las zanahorias limpias y cortadas a rodajas, damos unas vueltas, añadimos el vino y cuando se evapore agregamos los 250 cc. de agua. Cocemos la salsa hasta que la zanahoria esté tierna, no más de 10 minutos, añadimos fuera de fuego el miso, salpimentamos. Por último trituramos todo hasta que esté muy fino. Si hubiera consumido mucho el agua dutante la cocción añadimos más agua hirviendo hasta obtener una consistencia cremosa y fluida.
Vertemos sobre los pimientos rellenos, dam0s un hervor y servimos.
