Terrina de Anacardos y Tomate Seco
Una interesante terrina veraniega sin lácteos, sin huevos, sin gluten.
Ingredientes
90 gramos de anacardos
1 puñado de tomate seco
70 gramos de tofu
300 gramos de agua desclorada
3 cucharadas soperas de agar-agar
3 dientes de ajo
2 cucharaditas de cebolla en polvo
1 cucharadita de sal
1 cucharadita de orégano seco
3 cucharadas soperas de levadura de cerveza en copos
aceite de oliva para untar el molde
Elaboración
Se pone a hervir el agua con el agar-agar y cocemos durante 4 minutos. Después se ponen todos los ingredientes en un robot de cocina o batidora y trituramos hasta obtener una mezcla muy fina.
Vertemos la mezcla en el molde que previamente habremos untado de aceite de oliva.
Dejamos cuajar y refrigeramos por completo antes de servirlo. No debe consumirse hasta al menos 12 horas después, lo mejor es hacerlo de un día para otro.
Sirve para fiambre vegetal, para rellenos fríos, junto a ensaladas, para bocadillos, etc
Si lo calentamos de deshace.

La levadura de cerveza en esta receta es un condimento más, si no la pones el resultado final será igual aparte de que cambiará un poco el sabor, puedes sustituirlo por algo que te guste, tipo lecitina de soja, o dejarlo así simplemente.
