Bizcocho de Algarroba “Cocina Medicina”
Ingredientes
Para el pastel
- 250 gramos de harina integral de sarraceno
- 125 gramos de harina de algarroba
- 30 gramos de piñones
- 6 dátiles grandes
- 1 cucharadita de ralladura de naranja
- 1 cucharadita de levadura de cerveza fresca
- 50 gramos de sirope de ágave
- 3 cuch/s de aceite de coco
- 1 pizca de sal
- canela
- suficiente agua tibia sin cloro como para obtener una masa tipo bizcocho
- 4 cucharadas de sirope de arce
- 1 cucharadas de cacao puro en polvo
Elaboración
Picamos los dátiles y los mezclamos con los piñones.
Mezclamos las harinas, añadimos la levadura y vamos mezclando con agua hasta obtener una masa de consistencia tipo bizcocho o muffins. Añadimos el resto de ingredientes a la mezcla.
Dejamos reposar en la encimera durante 40 minutos.
Cocemos en horno medio, a unos 180 grados, durante 45 minutos o hasta que pinchándolo con una aguja salga seca.
Elaboramos el sirope de cobertura, mezclando bien sus ingredientes.
Servimos en trozos decorados sobre la marcha con el sirope y espolvoreados de canela.
