Arroz Caldoso Integral
Ingredientes
300 gramos de arroz integral de cocción rápida (granos pequeños redondos, unos 20 minutos)
el triple del volumen del arroz en agua
4 alcachofas
1 manojo de espárragos verdes
8 setas shitake
1 cebolla
4 dientes de ajo
2 tomates
50 gramos de aceite de oliva virgen
1 cucharadita de pimentón ahumado
unas hebras de azafrán
Elaboración
Cortamos en juliana fina la cebolla y estofamos con el aceite en una cacerola de paredes gruesas, agregamos el tomate sin piel y triturado y cuando pasen tres minutos, añadimos los ajos triturados, las setas cortadas en láminas, las alcachofas limpias de hojas duras y cortadas a cuartos, los espárragos troceados, el azafrán, el pimentón, y seguimos estofando unos minutos más. Ponemos el arroz y damos unas vueltas, añadimos el triple de su volumen en agua, y dejamos cocer tapado durante 20 minutos a fuego medio, removiendo de vez en cuando.
Salpimentamos y servimos rociado de limón, si gusta.
